Mostly Wheat Bread (based on a recipe from Melissa Davis)

Prepare Microwave for Proofing by microwaving a mug of water for 3 minutes.

Combine and let stand for 20 minutes (should be bubbly)
432g    Whole Wheat Flour
3T        Yeast
3.75 cup Hot Chlorine Free Water (100-132 deg F is okay, shoot for 110 deg F)

Let sit in warm steamy microwave for 20 minutes with the still steaming mug of water.

Then add
1T + 1t  Salt
1/2 cup  Olive Oil
1/2 cup  Honey, Pancake Syrup or Molasses
416g      Whole Wheat Flour (add slowly while mixing)
648g      White Flour (add slowly while mixing)

Knead until it passes the window pane test. A bit of extra flour may be needed at this stage, bug it should be a fairly sticky dough.

Microwave the mug of water for another 3 minutes.

Place dough into warm microwave for another 20 minutes.

Preheat oven to 200 deg F and turn off.

Form into loaves and let rise in the warm oven for ~15 minutes.

Take bread out of oven and heat the oven to 350°F. After about 5 min of preheating add bread and bake for 35 minutes. 

Creates 2 Big Loaves or 3 smaller loaves
