Carrot Cake (David Evans)

 2 cups Flour

2 cups Sugar (this can be cut back a bit)

2 t Baking Soda

2 t Cinnamon

1.25 cups Vegetable Oil

4 eggs

3-4 cups, packed down of grated carrots

1 t Salt


Mix together and bake at 350 F for 1 hour.

Cream Cheese Icing:

1 8-ounce package Cream Cheese

1/4 cup Butter, softened

2 cups Powdered Sugar

Cream the butter and cream cheese together until smooth. Add the confectioner's sugar and beat until creamy.
