These are a pretty good substitute for meatballs, and healthier in my opinion! Very easy to make.
First mix together these ingredients:
2 lb firm tofu, drained and mashed
1 cup bread crumbs
1 tablespoon of Braggs or soy sauce
1 tsp garlic pwd
1 tsp salt
2 tsp garlic pwd
You can add whatever other seasonings you think would be nice (oregano, parsley...anything Italian really).
Form into balls and coat in this breading mixture:
1/2 cup cornmeal
1/4 cup flour
Then fry in a bit of olive oil and serve with spaghetti.
