muffins

Banana Nut Muffins

1 1/2 c ww flour
1 1/2 c quick oats
1 c sugar
2 tsp baking powder
2 tsp baking soda
3/4 tsp salt
4 mashed bananas
1 c oil
1 c walnuts, chopped
2 eggs (or 2 T ground flax + 1/3 c water)

Mix dry ingredients separately. Mash bananas and add wet ingredients. Whisk flax with water to a froth and add. Mix and bake in ungreased muffin tins at 375 degrees for 20 minutes. Makes 2 dozen muffins.

Basic Muffin Mix (Debbie Forsyth)

2 c. Flour
1/2 c. Sugar
1/2 t. Salt
1 T. Baking Powder
1/4 c. Oil
1 c. Milk-like substance

Mix together. Bake at 425 for 10-15 minutes.

Corn Variation
add 1 c. Cornmeal
then add milk-like substance 1 T at a time to restore original consistancy.

Grandma's Classic Bran Muffins (Grandma Rick's converted to vegan)

Grandma's Classic Bran Muffins
Dry Ingredients:
1 1/2 c. Wheat Bran
2 T. Ground Flaxseed
1 c. White Flour
1 t. Baking Soda
1 t. Baking Powder
1/2 t. Salt

Wet Ingredients:
1/4 c. Almonds
1 t. Honey
1 1/3 c. Water
1 T. Lemon Juice
1/4 c. Oil
1/2 c. Brown Sugar
1/2 t. Vanilla

1/2 c. Raisins, Chopped Dates or Mashed Banana

Blend wet ingredients and almonds throughly in a blender. Mix with pre-mixed dry ingredients until well combined. Add chopped fruit and mix a little more. Spoon into greased tins. Bake 15-20 minutes @375 F. Makes 12 muffins.

154 calories/muffin (omitting last ingredient)
158 calories/muffin (mashed banana)
174 calories/muffin (dates or raisins)

Happy Sabbath

This morning after a walk to see if we could get a glimpse of Mt. Hood in the sunrise (Cat Game: Tim 1 - Laura 1), we had some yummy Sabbath muffins and headed for church at Vancouver SDA. This afternoon we are having some people over for Enchiladas and Banana Creme Pie that Laura whipped up yesterday.

By the way, this is kind of the first real post, meaning this site is starting to get its feet underneath it.
