Sautee
1 cups Onions, Diced (approximately 1/2 large onion)
3 cloves Garlic, Minced or Pressed
1 T Olive Oil
1 cup Red Bell Pepper, diced (approximately 1 large pepper)
1 t Tumeric
1 t Coriander, Ground
A little Cayenne Pepper (or 3 shots Tapatio)
Blend
1 block Tofu Firm
1 15oz can (1.5 cups) Garbanzos (drained)
3 T Lemon Juice
1 T Soy Sauce
1 t Dark Sesame Oil (if you can find it)
Mix
1/4 cup Parsley, fresh chopped
1/4 cup Tahini
1 t Salt
1/2 cup Bread Crumbs, as needed
Sautee onions over medium heat for about 5 minutes, add bell peppers and seasonings. Stir occasionally to prevent sticking.
Process tofu, garbanzos, lemon juice, soy sauce and sesame oil until well combined, but not a paste. It will be dry so you will have to stop and stir a few times.
Mix sauteed items with blended items and combine with remaining ingredients. Add bread crumbs if necessary to thicken the mixture. It's about prefect when after mixing it remains a lumpy on top.
Shape 1/2 cup portions onto well greased cookie sheet. Bake for 30 minutes at 350 until "golden, juicy and firm."
Makes about 8 falafel burgers. Serve with pita and veges.
